Hubby and I were craving some kabobs the other day. They are one of our favorites during the summer... but I really don't like the time it takes to skewer everything. Who has time to cook? And really... who wants to spend time slaving in the kitchen when it's gorgeous outside??
So this recipe is going to give you the flavors of yummy kabobs without the hassle! 😊
Healthy meals are super important to me, but I really don't like cooking... at all. But it's a necessity, so I try to find ways to make meals quick and easy!
The number one thing I LOVE... is having meat already cooked and in the freezer. So, when I buy a 3-5 lb. bag of frozen chicken, I grill the entire bag! We'll eat some for dinner that night then I put the rest into a freezer bag and pop it in the freezer. It's so easy to pull out what you need for a meal and thaw for a minute or so in the microwave.
I also had this cauliflower rice in the freezer. I bought more than I could use, so I "riced" it and put it in the freezer. It cooked up so nice!
This recipe came together in less than 30 minutes!
First, I cut up one yellow and one green pepper.
It doesn't matter what color they are, I'm just a nut for peppers. Seriously... I LOVE the colored ones, I could eat them like an apple. Anyway...
Cut up 2 peppers and 1 onion. Sauté in a bit of coconut oil. Add a can of pineapple chunks, drained, save the juice. Then add your cooked chicken, teriyaki sauce, and some of that pineapple juice.
Cook until everything is hot and bubbly. You could even add soy sauce or barbecue sauce.
Amazing!!
For the cauliflower rice, I just pulled some out of the freezer, plopped it in a skillet and heated it up with a tad bit of coconut oil. Easy!

Quick and easy kabobs without the hassle!
INGREDIENTS:
- 1 onion, chopped
- 1 green pepper, chopped
- 1 yellow pepper, chopped
- 1 can of pineapple chunks, drained
- cooked chicken, chopped
- Teriyaki sauce
- Saved pineapple juice
- Cauliflower rice
INSTRUCTIONS:
- Sauté onion and peppers in coconut or olive oil, until tender. Add pineapple chunks, chicken. Then add sauces to taste. Cook until hot and bubbly. Serve over cauliflower rice.
- Cauliflower rice is just heated in a pan until hot.
