I have been making this dish for over 20 years! It's become a staple for every holiday meal. It's that good! Over the years, I've cut down on the sugar and butter, and yet every bite is still just as good!
It is so incredibly easy to make and the brown sugar pecan crust makes this dish even more irresistible!
Hubby isn't a fan of nuts in food, so I usually only add pecans to half of the dish. He just doesn't know what he's missing. 😍
I've doubled and tripled this recipe with no issues. The recipe below is for an 8x8 dish.
Pecan Crusted Sweet Potato Bake Casserole
1 29 oz. can of sweet potatoes or yams
¼ cup of sugar ( I've used Splenda or Domino Light sugar with no issues)
½ tsp. salt
1 Tbl. flour
1 egg
2 Tbl. melted butter
1 tsp. vanilla
Mix until well combined and spread into an 8x8 dish.
Pecan Crust:
½ stick of melted butter
½ cup brown sugar
Pecans
Mix butter and brown sugar together and spread over sweet potatoes, then sprinkle desired amount of pecans.
Bake at 350° for 20 minutes. It's that simple! Enjoy!
