Now, I'm kinda funny about my cookies...
I like them a bit soft, but just slightly crispy on the edges. I like good texture and to be yummy of course! I can't stand it when a cookie comes out flat and thin, then they usually taste a bit oily.
But seriously, this recipe...you won't be disappointed, they come out perfect. It's amazing!
My daughter made them at college, and she said they came out flat. But she didn't use parchment paper. I think that might be key. Also, please use real butter, I'm not sure if she did. That could also alter the results.
Personally, I L.O.V.E white chocolate craisin cookies, that's what I baked in the picture, but you could use regular chocolate chips.
I also think what makes this recipe work is that you use melted butter. Yeah, weird, I know. But it works!
I mix this whole thing in my handy dandy Kitchen Aid Mixer. Love that thing!!
Ok. Here's the recipe.
Easy One Bowl Cookie Recipe
3/4 cup melted butter
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
2 1/4 cup flour
1/2 teaspoon baking soda
1 teaspoon salt
1 cup white chocolate chips (or chocolate chips)
3/4 cup craisins (opt)
Mix melted butter, brown sugar and sugar until creamy. Beat in the eggs. Add vanilla.
Then slowly add flour, baking soda, and salt. Fold in white chocolate chips and craisins. Use a cookie sheet lined with parchment paper. Bake at 375 for 10-12 minutes.
