These little pumpkin gems are delicious!!
I ground the cookies in my Mini Cuisinart.
That little chopper is one of my favorite gadgets! I use it so much!
Then I added all the ingredients except the white chips to my Kitchen Aid Mixer.
Blend til smooth, then refrigerate for 30 minutes.
Then roll into 1 inch balls. I used a little cookie scoop. This recipe makes about 36 balls. Place them on a cookie sheet with parchment paper and chill again.
The next step is to melt your white chocolate chips in a small bowl in the microwave for about 30 seconds at a time until smooth. You can use coconut oil to thin the chips. Coconut is solid at room temperature, but if you add a bit of heat it quickly turns to liquid.
Lightly coat the pumpkin spice balls with white chocolate, then chill again in the refrigerator.

PUMPKIN SPICE TRUFFLE DELIGHTS:
1 pkg. vanilla sandwich cookies
1 pkg. cream cheese (softened)
2 tsp. pumpkin pie spice
4-5 drops of yellow food coloring
3 drops of red food coloring
1 pkg. white chocolate chips
Coconut oil to thin chips for coating
Grind up vanilla sandwich cookies until they are complete crumbs. Place in large mixing bowl.
Add cream cheese, pumpkin pie spice, and food coloring.
Using a mixer blend until smooth.
Chill in refrigerator for 30 minutes. Then roll into 1 inch balls, and place on cookie sheet with parchment paper and chill again.
Melt white chocolate chips in a small bowl in the microwave for 30 seconds at a time until smooth. Add coconut oil to thin chips to desired consistency.
Using forks roll the pumpkin spice balls in melted chips until completely covered.
Place again on the cookie sheet with parchment paper and chill again til the coating has hardened.
